Bruschetta Chicken

Before coming home the night I created this dish I decided to try to see if I could scrounge around for something delicious without having to stop at the supermarket. One thing that I hate doing is stopping at the store on my way home from work to get ingredients for dinner. If and when I do that it puts me so behind schedule and then dinner won’t be ready until 8:30, 9 o'clock! Who wants to eat a home cooked meal that late on a work/school night?

This is what I came up with using ingredients I already had in my kitchen (with the exception of the chicken that Kelsernator brought over).

This is Bruschetta Chicken. It is a non-fuss, delicious meal that can be ready in a half hour. I used chicken tenders, which are slimmer and smaller pieces of chicken, compared to chicken breasts which are much larger and take longer to cook. If I was going to make this recipe for more than myself and two other girls, I would have used chicken breasts and thinned them out by pounding or cutting them in half, making the pieces larger than the tenders, while still allowing them to cook just as fast.

Not only is this meal easy, fresh and fast, but it is also relatively healthy with barely any mess (my fav!)

Keep in mind that this recipe is a great example of how important high quality foods are to creating an awesome meal with not many ingredients. Using quality olive oil, tomatoes and balsamic vinegar is what allows this recipe to be so remarkable. Sometimes it’s worth it to spend the extra buck for certain ingredients because they will make your culinary expeditions way more worth it.


1 Package of Chicken Tenders (or chicken breasts -sliced thinner or pounded thin) 5 Chopped Cloves of Garlic 2 Cups Sliced Cherry or Grape Tomatoes 1/2 Cup Sliced Roasted Red Peppers 3 Tbsp. Chopped Basil 2 Tbsp. Olive Oil ( + additional for spraying the pan) 2-3 Tbsp. HIGH QUALITY Balsamic Vinegar Salt & Pepper to Taste *Optional - Sprinkle with Goat Cheese at the end

Directions: Preheat the oven to 350 degrees. While the oven is heating up, spray a glass baking dish with olive oil (or Pam, which you know I hate so buy a misto sprayer!!!). Place the chicken on the pan making sure they are not overlapping and sprinkle with a little salt and pepper.

In a bowl, combine all the other ingredients together and toss well. Then pour your "bruschetta" mixture on top of the chicken. Place the chicken uncovered in the oven for 20-25 minutes or until no longer pink inside. Feel free to sprinkle goat cheese on top of the chicken before serving!

I served this with Asparagus and Rice Pilaf and it was one of the fastest meals I have ever thrown together, and one of my favorites!
